Lance Knowling is the owner and Executive Chef of Blujeen, an American restaurant that represents the struggles and triumphs of the women during the 50s and 60s era; he is inspired by the women in his family when he cooks. His cuisine represents the traditional dishes of his heritage and his culinary training elevating it to new heights. A Kansas City native, Lance's culinary training began at the acclaimed Laurel's in Dallas. Chef Lance has worked at the Four Seasons Las Colinas, the New York Marriot Marquis and he worked in numerous New York City hotels and restaurants since the 1980s. In 2002, he opened Indigo Smoke Restaurant and Indigo Kitchen catering whose clients includes Queen Latifah, Whoopi Goldberg and the New York Jets. In 2010 he was one of the chefs responsible for catering the wedding of Chelsea Clinton and had the pleasure of preparing a special meal for the bride and groom, as well as dinner for President Clinton.
